I think I have finally nailed down an actual recipe for this - yay!

This time it was soooooooooo spicy, but since the heat comes from black pepper and garlic, it's a heat I can actually manage to eat. This is just such a PRETTY dish and it smells so nice.

This is how I cook - I use the foil so that clean up is a cinch! No more soaking or scrubbing my pans!

Isn't the color just gorgeous? This was very spicy with a bit of heat and sweet at the same time.

Ready for the eating! pour a little 100% maple syrup on these babies and you'd NEVER know the difference - except that you won't get the fatigue and quick energy that regular carb filled pancakes give you! ;)

Look how they golden up! We left these ones on a tad bit too long, but they were delicious! Sort of like whole wheat or whole grain flapjacks!

I thought I'd take some better pictures of the last batch because the pictures just weren't capturing the inner muffinyness of the muffins. :)
Berry Muffins - 3rd try (better picture)
Success! This batch was REALLLLY good! 

Still a touch too moist, BUT - they are light and airy and fluffy, and they taste slightly sweet (I'd like them a smidge sweeter, but really, one wouldn't complain about these at all), and the berries were delicious!

All I did was turn the heat down to 325 and baked them for about 25 minutes - just a little longer.
Berry Muffins - 3rd try
So this is the first batch of berry muffins after trying the first berry muffins recipe which I absolutely did not like.

It's good, but a little too moist and way too dark. This batch was baked at 350 for 23 minutes.

I was trying to do a paleo take on an eggs benedict with this dish, before I dug up a few paleo hallondaise recipes.
